Puttu is one of the healthiest breakfast dish of Kerala usually made from roasted rice flour and grated coconut. As Mango season is going on these days, I tried Puttu with Mangoes. Mangoes are known as” King of fruits”. As they are rich in essential nutrients and vitamins and antioxidants that boost immunity which help to reduce the risk of heart disease. It has the highest beta carotene. They also contain vitamins such as E, B6, C ,K and many minerals. So try to include mangoes in different ways in your daily food.
Ingredients
1 cup roasted rice flour
½ cup grated coconut
1 cup ripe mango chopped
Salt to taste
Water as required
Method
Peel and chop the mango into cubes
Mix little salt to water and add water little by little to the rice flour and gently mix with your finger tips until the powder becomes moist and without lumps.
Fill a pressure cooker with 3-4 cups of water and bring to boil.
Take a Puttu maker ( I used chiratta puttu maker) and layer it with 1tbsp grated coconut and the add 2 tbsp mango cubes. Then add the rice flour and top it with another layer of grated coconut.
Place the puttumaker on the pressure cooker and steam cook for 5-7 minutes or until the steam start coming out from the puttu maker
Remove it to a plate and serve hot. You may not need any accompaniments with Mango Puttu as it is tasty.
