Lemon Blueberry Muffin

Lemon Blueberry muffins is  a simple recipe with fresh or frozen blueberries and lemon zest. This muffin is moist and tender and fluffy with hint of lemon zing and juicy blueberries.


1 ¼ cup All purpose flour

2/3 cup sugar

1 egg

¼ cup yogurt

½ cup any flavour less oil

1/3 cup milk

1 tsp vanilla extract

1 tbsp lemon zest

1 tsp baking powder

¼ tsp salt

1 cup Blueberries


In a mixing bowl mix sugar, egg, yogurt ,oil, milk ,vanilla and lemon zest.

In an another bowl blend together flour, baking powder and salt.

Mix  the wet and  and dry ingredients until combined.

Gently fold in the blueberries

Line 8 muffin cups with paper liner. Spoon the batter into the muffin cups until almost full

Preheat the oven to 375 degree (190degeee C) and Bake foe 30-40 minutes.

Let it cool for 10 minutes. Enjoy these muffins with a cup of tea
