Are you craving for some warm, delicious cookies? Then these eggless,crispy, crunchy and crumbly coconut cookies are for you. Coconut cookies are so popular among kids and it is easy to prepare. In this post I am showing how to bake these coconut cookies with oven and without oven method. A warm cup of tea along with homemade crispy cookies sounds heavenly.
Ingredients
1 cup All purpose flour
½ cup desiccated coconut + some for coating
½ tsp Baking powder
½ cup Ghee
½ cup powdered sugar
2 tbsp milk
Method
Combine flour, baking powder and desiccated coconut in a mixing bowl.
Add ghee and sugar into a large mixing bowl. Cream the ghee and sugar until light and fluffy.
Add the dry ingredients to the bowl and mix well. Add milk little by little and make it a soft dough. The dough should not be sticky or runny. Chill in the refrigerator for half an hour.
Pre heat the oven to 350 F. line a baking tray with parchment paper.
Divide the cookie dough into lemon size balls, roll the balls in the coconut powder.
Arrange the bakks with enough space in the baking tray
Bake for 15 minutes.
For Baking in stove top
Heat a heavy bottom pan with a stand for 10 minutes.
Arrange the balls in a baking tray or in a plate lined with parchment paper.
Arrange the balls with enough space in the plate.
Keep the plate inside the stove heated heavy bottom pan.
Cover with a lid and bake for 20 minutes
Let the cookies cool down completely and serve with hot coffee or tea.
