Pumpkin Dinner Roll

Pumpkins are delicious and nutritious. So why not add some in the dinner rolls. These rolls even look like mini pumpkins. They are soft and tender with a hint of sweetness.

Ingredients

1 Kg Butternut Squash or Pumpkin

½ cup lukewarm milk

3 tbsp melted butter

¼ cup Brown Sugar

½ tsp salt

2 tsp instant dry yeast

2 ½ cup All purpose flour

Method

Peel the pumpkin and cut into small pieces

Microwave it for 12 minutes or steam it until the pumpkin pieces are tender and can be easily mashed with a fork.

Mash the pumpkin or blend it in a blender until it becomes smooth puree.

In a large mixing bowl add in milk, melted butter and pureed pumpkin. Mix well.

Add sugar, salt and instant yeast and mix well.

Sift in flour and mix until the batter looks incorporated.

Gently knead with your hands. Cover the bowl and let it rest for 10 minutes.

After 10 minutes knead the dough until it becomes smooth and elastic.

Grease a bowl with little oil. Place the dough inside and cover it,

Proof at room temperature until the dough doubles in size or for one hour.

After one hour take the dough out of the bowl and knead for another 2-3 minutes

Divide the dough into 8 portions. Shape the dough pieces into balls .

Gently flatten the ball a little and place it in a baking tray lined with parchment paper about 3-4 cm apart from each other.

To make the pumpkin shape dip the tip of the scissors into oil and cut the dough into petals, the dough should resemble a flower. Then use a chop stick or something similar to make a small hole in the centre of the dough

After you finish shaping the dough cover it and leave it for one more hour.

After one hour using a small brush, gently brush a thin layer of milk wash or egg wash. This will help the baked buns to have a shiny golden brown crust.

Pre heat the oven and bake at 180 c or 350F for 20 minutes until the buns become golden brown.

After about 15 minutes rotate the tray so that the buns are evenly baked

Remove the buns from the oven. Break a pecan in half and put it in the hole at the centre of the bun to make the stem.{you can also use a short stick of cinnamon}.
