This is a soft and tender orange cake with fresh orange flavour. Perfect for any occasion but such a highlight with a cup of tea or coffee.
2 ½ cup All purpose Flour
2 ½ tsp baking powder
4 large eggs
1 ½ half cup sugar
1 1/4 cup fresh orange juice
Orange Zest from 3 or 4 oranges
1 tsp vanilla extract
1 cup vegetable oil
In a medium bowl whisk together flour and baking powder.
In a large mixing bowl whisk together eggs and sugar on until it is pale and fluffy for about 5 minutes.
Add oil, orange juice, zest and vanilla extract and keep whisking until combined.
Add flour mixture and whisk just until combined. Don’t overmix.
Pour the batter into prepared pans and for 40-50 minutes
Allow the cakes to cool completely and dust it with icing sugar.
