Corn flakes mixture is a crisp, crunchy sweet and savoury mixture made with corn flakes, dry fruits and spices. It can be prepared as a munching snack for evening tea. Normally special makai flakes available in the stores are used to make this mixture. These are not the ready to eat cereal cornflakes. You can also make this mixture with the ready to eat cornflakes . If you are using cereal corn flakes don’t deep fry it just roast it.
2 cups corn flakes/makai poha
½ cup peanut
¼ cup roasted chana dal
¼ cup cashew nut
¼ cup raisins
1tsp chilli powder
Few curry leaves
3 whole red chilli
1 tsp sugar
½ tsp amchur powder
Oil for frying
In a bowl add salt, chilli powder, sugar and amchur powder. Mix well and keep aside
Heat oil in a frying pan. When the oil is hot add the cornflakes in a large slotted spoon and place it in the hot oil. When the corn flakes is puffed up and turn crisp and golden remove it into a large plate lined kitchen paper towel.
Next add peanuts and cashew nuts and fry them till they are crisp.
Now fry the roasted gram and fry them till lightly golden. Next add raisins and fry till it puffs up.
Turn off the flame and add the curry leaves and the broken chillies and fry them till they turn crisp.
Mix all the fried ingredients well. While the fried ingredients are still hot, sprinkle the spice mixture all over and mix well
Enjoy corn flakes mixture with hot tea and Store in an air tight container
