Roasted Red Bell Pepper Hummus is a delicious variation of the hummus. This spicy dip has a smoky and nutty flavour from the charred bell pepper and chickpeas.
2 cups of cooked and skin removed Chickpeas
1 Red Bell Pepper charred and skin removed
3 Garlic pods
½ tsp Kashmiri chilli powder/Paparika
1/3 cup Tahini/Greek yogurt
¼ cup Olive oil
1 tsp Salt
1/3 cup Lime juice
Roast the bell pepper in the oven or on the stove top till they are soft and smoky
Peel the boiled chickpeas before processing to make the hummus ultra smooth and creamy.
In a blender add roasted bell pepper, chick peas, garlic. Lemon juice, chilli powder, tahini, and salt .
Blend into a smooth paste. Transfer into a bowl and add olive oil and mix well.
Sprinkle some chilli flakes and drizzle some olive oil on the top.
Serve the roasted Red Pepper Hummus along with pita bread or over a cracker or as a spread on your bread.
