Cucumber Lassi is simple, quick, heathy, delicious and easy to make lassi. it is good for health especially during hot summers. A perfect accompaniment to a light lunch during summer.
1 medium cucumber peeled and cubed
1 cup yogurt
1 inch ginger
1 green chilli
1 tablespoon chopped coriander leaves
2 tablespoon sugar
Salt to taste
Peel and chop the cucumber and blend together with ginger, coriander leaves. Green chillies, sugar and salt to a smooth paste
Add yogurt and blend again for a minute.
Pour into serving glasses and serve immediately. You can also add ice cubes if needed.
