As Diwali is around the corner, so this week I am doing some of the diwali sweets. Todays’s recipe is an Apple and Coconut burfi which is soft, slightly chewy and utterly delicious. This burfi is made with the goodness of juicy red apple and fresh coconut, flavoured with cardamom and topped with pistachios and almonds. Do try this unique way of using apples in a classic Indian Dessert.
Ingredients
1 big red Apple grated or 2 small Apples
½ cup grated Coconut
¾ cup Sugar
1 tsp Ghee
½ tsp Cardamom powder
1 tbsp chopped Almonds and Pistachios
Method
Grease a tray with a bit of ghee and set aside.
Melt the ghee in a pan and add grated apple, coconut, sugar and cardamom powder to it.
Mix well and cook for 10 minutes or till the mixture becomes dry and comes together to form a soft, fudgy mass.
Pour the mixture in to the greased tray and smooth the top with a spoon.
Sprinkle chopped nuts on the top and press down slightly with a spoon.
Allow it to cool down. Cut the burfi into square pieces and serve it as a dessert and give your meal a perfect ending.
