Avial is also an integral part of onam sadya. Avial is a blend of different veggies in a spicy coconut and yogurt gravy and garnished with curry leaves and coconut oil. There are variations of making avial in different part of Kerala. It is also made with raw mango or tamarind or curd. In this recipe I have used curd.
Ingredients
2 cups mixed vegetables
½ cup curd
Salt to taste
1 tbsp coconut oil
A sprig of curry leaves
To grind
½ cup grated coconut
3 green chillies
1/4 tsp cumin seed
Method
Cut the vegetables lengthwise(carrot, cluster beans, drumstick, yam and ashgourd).
To a mixer jar add grated coconut, cummin seed and green chillies and grind to a coarse mixture.
In a pan add one cup of water add yam and drumstick. Cook till it is half done. Now add the remaining vegetables and salt. Cook until soft and then add coconut mixture and cook for another couple of minutes. Add yogurt and mix well.
Switch off the flame and add curry leaves and coconut oil. Mix well and cover with a lid for 5 minutes.
Serve with Rice.
