The recipe for today is “Kurukku Kalan” which is a part of onam sadya. Kurukku Kalan is a slightly thick preparation made of yogurt, coconut and vegetables like raw plantain and yam.
Ingredients
1 cup chopped yam
2 cups of Thick curd
1tsp Pepper powder
A pinch of turmeric powder
Salt to taste
For grinding
1 cup grated fresh coconut
3 to 4 green chillies
For Seasoning
½ tsp mustard seeds
2 dried red chillies
¼ tsp fenugreek seeds
1 tsp coconut oil
Few curry leaves
Method
Peel the yam. Dice into 2” squares pieces.
Cook the yam by adding just enough water with turmeric powder, pepper powder and salt. ( you can also add plantain to this)
Grind the coconut and green chillies to a fine paste using 2tbsp of curd.
Now add this paste to remaining curd and mix well. Add it to the cooked vegetables. Let it come to boil and then remove from flame.
Heat a pan and add oil to it. When the oil is hot add mustard seeds. Once it splutters add fenu greek seeds and dried red chillies. Pour it over Kalan. Garnish it with curry leaves.
Yummy kalan is ready to serve.
