Rice Flour Dumplings (Ammini Kozhukattai)

Ammini Kozhukattai are rice flour dumplings that are steamed and later tossed in a tempering for additional flavour. Delicious Ammini Kozhukattai goes well as breakfast or as snack. Traditionally it is made for Vinayaka Chaturthi

 Ingredients

½ cup rice flour

1 cup water

2 tablespoon cooking oil

Salt to taste

For Tempering

1 teaspoon mustard seed

1 teaspoon urad dal

1 sprig curry leaves

2 tablespoon fresh coconut

A pinch of asafetida

Method

Bring the water to boil. Add salt and 1 tablespoon oil to it

Now add the rice flour and mix well  on medium flame so that there is no lumps

Switch off theflame and it with a lid

When the dough comes to slightly more than room temperature knead it well by greasing your fingers with oil

Now make small marble size balls out of the dough and steam it in a steamer for 15 minutes

Once done cool it for some times

In a pan add the remaining oil and add mustard seed and urad dal

When it crackles add red chilli, curry leaves, Asafetida and grated coconut

Add the Ammini Kozhukattai to this tempering and toss well

Enjoy it with tea.
