Mooli paratha is a whole wheat flat bread stuffed with grated radish. Mooli paratha is anoher Punjabi cuisine. The stuffing is made from grated and spiced radish. This can be enjoyed at any time of the day and go very well with curd or pickle.
Ingredients
For stuffing
2 cup grated radish
2 finely chopped green chilli
½ tsp chilli powder
½ teaspoon coriander powder
¼ tsp turmeric powder
2 tbsp finely chopped coriander leaves
½ tsp salt
For paratha
2 cup wheat flour
1 tbsp oil
Salt to taste
Ghee or oil as required
Method
Add ½ tsp salt to grated mooli and mix well. Leave it for 15 minutes. Squeeze the grated mooli to remove excess of water in it. This juice can be used to make the dough.
Then add chilli powder, chopped green chilli, turmeric powder, coriander powder and coriander leaves to mooli and mix well
Take 2 cups of wheat flour, 1 tbsp oil and salt in a bowl. Knead into a smooth and soft dough using water squeezed from mooli. If require add additional water. Cover it with a plate and rest it for 10 minutes
Take a medium sized ball dough and roll it in to a circle of 5 inches diameter. Place the radish stuffing in the center. Bring all the edges together and pinch to seal the edges, flatten the dough ball using your hands. Now using rolling pin roll the dough into a circle of 7 inch diameter
Transfer the rolled paratha onto a hot tawa and cook for a minute, then add oil or ghee and press slightly. Flip again once or twice till both the sides are cooked
Serve mooli paratha with curd, pickle or curry
