Aloo paratha is one of the most popular Paratha from punjab. A whole wheat flatbread stuffed with a spicy potato filling. This paratha is best enjoyed with yogurt, pickle and butter. It is perfect for breakfast, lunch and dinner. Aloo paratha tastes great when roasted with ghee

Ingredients
For Dough
2 cup wheat flour
2 tsp oil
1/2 tsp salt
1 cup water
For stuffing
2 large size boiled potatoes
2 green chillies chopped
1tsp crushed coriander seeds
1 tspcrushed cumin seed
1/2 tsp ajwain
1 tbsp grated ginger
1/2 tsp chilli powder
1/4 tsp turmeric powder
2 tbsp chopped corinder leaves
1/4 tsp salt

Method
Knead the flour to a soft dough by adding salt , water and oil.
In a large bowl add mashed potato/grated, green chillies, crushed coriander and cumin seeds, chilli powder, turmeric powder , ajwain , grated ginger, chopped coriander seeds and salt. Mix well making sure all the spices are combined well

Take a small ball of dough and roll it in a circle of about 5 inches in diameter.Place a ball sized aloo stuffing in the centre. Take the edge and start pleating bringing to the centre. Sprinkle some flour and roll slightly thick
Cook the paratha to golden brown by adding ghee or oil
Serve hot with pickle or curd/raita
