Palak paneer is a popular north Indian dish made of blanched spinach and paneer. Milk cream is also used to bring in rich creamy texture.
Ingredients
Spinach 1 bunch
Paneer cubes 1 cup
Green chillies 3 nos
Ginger ½ inch piece
Garlic 3 cloves
Onion chopped 1
Cumin seed ½ tsp
Fresh cream 2 tbsp
Oil 2 tbsp
Butter 1 tbsp
Tomato 1 (optional)
Salt to taste
Method
Rinse the Spinach very well in running water
To blanch the spinach, boil it in salted water for 2 minutes
Drain it using a strainer and transfer into cold water
After a minute drain the water transfer the blanched spinach into a mixer jar.
Add green chillies, onion, ginger and garlic to it and grind into smooth puree
Heat 2 tablespoon oil in a kadai ,
Add paneer cubes and shallow fry them until the sides turn light brown
Transfer them to a plate
Heat one tablespoon butter in a pan and add cumin seeds and sauté them for 30 seconds
Add spinach puree and salt. Stir and cook for 2-3 minutes. Add 1/3 cup of water
When the gravy starts to boil add fried paneer cubes and cook for 3 minutes
Turn off the flame and add cream
Serve it with rotii , naan or paratha
